Baked Chicken Egg Rolls

Ingredients:
2 cups grated carrots
1 (14.5 ounce) can bean sprouts, drained
1/2 cup chopped water chestnuts
1/4 cup chopped green bell pepper
1/4 cup chopped green onions
1 clove garlic, minced
2 cups finely diced cooked chicken
4 teaspoons cornstarch
1 tablespoon water
1 tablespoon light soy sauce
1 teaspoon vegetable oil
1 teaspoon brown sugar
1 pinch cayenne pepper
16 egg roll wrappers
nonstick cooking spray

Directions:
1. Preheat oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet.
2. Coat a large skillet with nonstick cooking spray and heat over medium heat; cook and stir carrots, bean sprouts, water chestnuts, green pepper, green onions, and garlic until vegetables are crisp, about 3 minutes. Stir in chicken until heated through, 3 to 5 minutes.
3. Combine cornstarch, water, soy sauce, 1 teaspoon oil, brown sugar, and cayenne in a small bowl; stir into chicken mixture. Bring to a boil over high heat and stir, cooking until sauce is thickened, about 2 minutes; remove from heat.
4. Spoon 1/4 cup chicken mixture on the bottom third of one egg roll wrapper. Fold sides toward center and roll tightly; place seam side down on prepared baking sheet. Repeat with remaining filling and wrappers. Spray top of egg rolls with nonstick cooking spray.
5. Bake in preheated oven until lightly browned, 10 to 15 minutes.

Comments:
Egg rolls are relatively easy to make and aren't too bad for you if you fill them with a lot of veggies and bake, rather than fry, them. These were good, even though I left the water chestnuts out because Adam's not a fan.

Asian Chicken Sizzling Salad

From Kraft



Ingredients:
1 small boneless skinless chicken breast half (4 oz.)
1/2 tsp. oil
1/6 Kraft Sizzling Salads Asian Chicken Dinner Kit
3 cups tightly packed baby spinach leaves
1/4 cup drained canned mandarin oranges
1/4 cup shredded carrots
1/4 cup fresh bean sprouts
1/4 cup halved snow peas
1 green onion, sliced
1 Tbsp. sliced almonds

Directions:
Cook chicken in hot oil in skillet on medium-high heat 4 to 5 min. on each side or until done (165ºF).

Add 2 Tbsp. Cooking Sauce; cook on low heat 1 min., turning chicken after 30 sec.

Combine remaining ingredients. Add 2 Tbsp. Dressing; mix lightly. Serve with chicken.

Comments:
I skipped the spinach and the dressing since I'm not a fan of sesame oil, but I really liked the cooking sauce. Adam liked the whole thing. We picked this Sizzling Salad kit up for FREE because it was on sale and had a coupon that doubled. Can't beat that. We also got the Caesar kit and look forward to trying that one.

Spring Onion and Chicken Stir-Fry

From Cooking Light



Ingredients:
8 ounces uncooked angel hair pasta (I used rice noodles)
2 teaspoons chili oil
4 chicken breast tenders, halved
1/4 cup low-sodium chicken broth
1 tablespoon brown sugar
1/4 teaspoon salt
2 tablespoons low-sodium soy sauce
1 cup sliced green onions (about 4)
1 1/2 cups fresh bean sprouts

Directions:
Cook pasta according to package directions, omitting salt and fat. Drain well.

Add oil to a 10-inch nonstick skillet, and place over medium-high heat until hot. Add chicken; stir-fry 5 minutes or until done. Remove chicken from pan; keep warm.

Combine broth and next 3 ingredients, and stir well with a whisk.

Add green onions to pan; stir-fry 1 to 2 minutes or until lightly browned. Return chicken to pan. Stir in broth mixture, drained pasta, and bean sprouts.

Comments:
This was kind of blah. I'm not sure why, since there's a lot of different things going on in the dish. It wasn't bad, just not a powerhouse of flavor. Probably won't try this one again.

Sizzling Salmon and Spinach Salad with Soy Vinaigrette

Ingredients:
DRESSING:
3 tablespoons thinly sliced green onions
3 tablespoons rice vinegar
3 tablespoons low-sodium soy sauce
1 tablespoon water
1 teaspoon sesame seeds, toasted
1 teaspoon bottled minced garlic
1 teaspoon dark sesame oil
1/2 teaspoon chile paste with garlic or 1/4 teaspoon crushed red pepper

SALAD:
2 teaspoons dark sesame oil, divided
4 cups thinly sliced shiitake or button mushroom caps (about 8 ounces)
1 cup (1-inch) sliced green onions
1 cup fresh or frozen corn kernels, thawed
4 (6-ounce) salmon fillets (about 1 inch thick)
8 cups baby spinach
1 cup fresh bean sprouts
1 cup red bell pepper strips

Directions:
Preheat broiler.

To prepare dressing, combine first 8 ingredients in a small bowl, and stir well with a whisk.

To prepare salad, heat 1 teaspoon oil in a large nonstick skillet over medium-high heat. Add mushrooms and 1 cup onions; sauté 8 minutes. Stir in corn; remove from heat.

Place the fish on a foil-lined baking sheet; brush evenly with 1 teaspoon oil. Broil 8 minutes or until fish flakes easily when tested with a fork.

Place 2 cups spinach on each of 4 plates; top each serving with 1/4 cup bean sprouts, 1/4 cup red bell pepper, 1/2 cup mushroom mixture, and 1 fillet. Drizzle about 2 tablespoons dressing over each salad.

Comments:
There is A LOT going on in this one. All kinds of veggies, fish, a dressing. It comes together pretty easily, but I still had to have Adam check the fish. I never know when it's done. He liked all the different flavors that come together. I, of course, didn't eat this. I had this lentil soup instead (also meatless, not fishy.) I always make a big batch and freeze it. Yum.

Asian Burgers

From Taste of Home



Ingredients:
2 tablespoons soy sauce
1 tablespoon sesame oil
1 can (8 ounces) sliced water chestnuts, drained and chopped
1 cup fresh bean sprouts
1/2 cup finely chopped fresh mushrooms
1 celery rib, finely chopped
4 green onions, finely chopped
1 teaspoon pepper
1/2 teaspoon salt
2 pounds ground beef
4 teaspoons canola oil
1/2 cup mayonnaise
1 tablespoon prepared wasabi
8 sesame seed hamburger buns, split
3 cups shredded Chinese or napa cabbage

Directions:
In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. Shape into eight patties.

In two large skillets, cook burgers in oil over medium heat for 5-6 minutes on each side or until a meat thermometer reads 160°.

Meanwhile, combine mayonnaise and wasabi; spread over buns. Serve burgers on buns with cabbage.

Comments:
Hmm. I kind of "De-Asian-ified" this a bit. Left out the water chestnuts (Adam doesn't like), mushrooms (I don't like) and wasabi (don't have, not worth buying just for this.) I also (obviously) took the lazy way out and used pre-shredded, bagged cabbage. Other than that I stuck to the plan. They were good. Nice crunch from the celery and cabbage with just a hint of soy in the background.

Wontons (what a boring name. They're PORK wontons)

Ingredients:
ground pork
shredded cabbage
bean sprouts
onion
eggs
salt & pepper
wonton wrappers

Comments:
I actually followed this recipe. I even bought ground pork, where I would usually sub turkey. Ok, so I did omit the sauce and cooked them up in the deep fryer rather than an electric skillet (which I just realized I don't even own!) but they turned out just fine. I generally fall victim to the "overstuffing the wonton" curse, but this time they turned out pretty good even with a few bulging ones. As Adam declared, "a keeper."
